PROCESSED PRODUCTS FROM LITCHI AND LONGAN AND THEIR PROCESSING TECHNOLOGY IN CHINA
Litchi and longan are important commercial fruits of southern China. Fresh litchi and longan have a very short shelf life and market price at peak harvesting season decreases markedly due to excessive supply. Processing of litchi and longan recently gained increasing importance in China. According to the principles of food preservation, the processing technology of litchi and longan is divided into different methods, i.e., drying, canning, juice, fermentation, and frozen. The current status of some selected processed products such as dried litchi and longan, canned litchi, litchi juice, litchi wine and frozen litchi and their practical methods of processing are discussed in this paper.
