DIVERSITY AND DYNAMIC OF VOLATILE PATTERNS IN FRAGARIA

Flavour is one of the key attributes of strawberry fruit quality. Out of the more than 300 volatile organic compounds (VOCs) identified so far around 20-30 character impact compounds dominate the typical aroma impression. Since the aroma composition is influenced by several parameters like cultivar, maturity, climate and cultivation system adequate methods for berry sampling, sample preparation, separation and data processing are required to determine the dynamic and diversity of aroma composition. The diversity of VOC patterns for 15 F. vesca accessions is discussed in comparison to F. ×ananassa.
