PERMACULTURE: INSIGHTS INTO KITCHEN GARDENS OF ENVIRONMENTAL AND ECO-TOURISM OPERATOR IN THAILAND

Permaculture is a practice that looks beyond sustainability by turning dependent consumers into responsible producers. A major eco-tourism operator, Soneva, owns and operates luxurious and environmentally conscious five-star resorts in Maldives and Thailand. A culture of environmental and social conscience had been established as reflected in the ideology of SLOW LIFE in Soneva resorts. Composting of food and garden waste is practiced. This has eliminated the use of chemical fertilizers in the gardens. There is an organic kitchen garden that serves most of the herbs and vegetable needs of the restaurants of Soneva Fushi in Maldives and Soneva’s Kiri in Thailand. The kitchen gardens produced a range of fruit and vegetables, and had a wastewater recycling system. This paper looks at the contribution of the kitchen gardens to environmental sustainability.
