Strawberry can be grown in various ecological conditions due to its high adaptation characteristics to various climate and soil conditions. In Turkey, strawberry production is taking place mostly around the Mediterranean coastal region using imported foreign cultivars. Strawberry is a good source of carbohydrates, vitamin C, and other antioxidant compounds, such as polyphenols. Sugars are the main soluble components in ripe strawberry fruit, with glucose, fructose, and sucrose accounting for almost 99% of total sugar content. Vitamin C is one of the most important free radical scavengers in plants, animals, and humans. In this study, the performances of fresh and frigo plants of 'Sahara', 'Sabrina', 'Splendor' and 'Safari' strawberry cultivars were detected based on their sugars, carboxylic acids and vitamin C content by HPLC.
