Physico-chemical parameters of noni powder (Morinda citrifolia L.) and rehydration kinetics of lyophilized powder
The objective of this work was to analyze the physical-chemical characteristics of the noni pulp and to evaluate the rehydration kinetics of the powder obtained after lyophilization of the fruit pulp. Lyophilization of the pulp was carried out at a vacuum pressure of 130 μHg with samples temperature of -21°C. Physico-chemical analyses of pH, soluble solids content (°Brix) and titratable acidity (g 100 g-1 citric acid) were performed and the Peleg and Weibull models were used to describe the rehydration kinetics. The physico-chemical characterization presented values in agreement with the limits established by the Brazilian legislation and the two equations used to adjust the behavior of rehydration kinetics were efficient.
