Advances in research on main antioxidant active components of jujube
Jujube fruit, which has been regarded as an excellent product for both food and medicine.
In recent years, a large number of biologically active and medicinal substances have been extracted from jujube fruits, including nascent metabolites: carbohydrate, proteins and amino acids; secondary metabolites: alkaloids, triterpenoids, saponins, phenolic acids, flavonoids and cyclic nucleotides, vitamins; and biologically active polypeptides which can be obtained by enzymatic hydrolysis.
These ingredients have antioxidant, anti-tumor, anti-cancer, liver-protecting, and immune-enhancing effects.
Among them, antioxidant has broad application prospects in food health care, medical care, and meticulous chemical products.
This paper reviews the research progress of antioxidants in jujube fruit extracts.
