Growth and development of asai in Guaviare, Colombia - morphological changes during maturity

The characterization of palm fruit development is a challenge for conventional post-harvest technologies. These fruits have a behavior that is different from that of fleshy fruits. However, the chaining of these species to productive processes requires the development of knowledge that facilitates the collection of fruit at the right time. These fruits, because of their technological aptitude, are not consumed as table fruits or snacks, but, as has been studied, require processing for consumption as pulp or other derivatives. This processing requires healthy and mature fruits for the transformation, so this study identified morphological changes of fruits during development and a specific work methodology was established that was used to gather all of the stages of development and maturation for same productive cycle with first and second order predictive models. The maximum fruit growth and color were established as the most reliable indicator of ripening for this species.
