APPLE FRUIT QUALITY IN RELATION TO FRUIT CHEMICAL COMPOSITION
Data on the distribution of constituents in apples and changes that occur during storage are reviewed.
The development of physiological disorders in particular zones of apples may be allied to changes in the chemical composition in these and other zones.
The flavour and texture of the various zones of the fruit may alter differently during storage because of changes in the distribution of dry matter, water and organic acids.
