IMPROVING PRODUCT OF DURIAN CAKE

Durian cake is usually packed in tinplate container and kept under room temperature. In such condition, keeping length over 4 months without fungal contamination is not possible. In the present study, it has been found that storage under -20°C, durian cake can be stored for 3 years with desirable quality. In order to gain high price and avoid the condition of undesirable quality of durian cake under usual storage, durian flesh was cooked as 80% semi-instant durian cake and stored at -20°C. Then, specific amount can be removed for additional process to produce freshly cooked durian cake to serve marketable requirement at any time of the year. In addition, new attractive package of durian cake has also been developed.
