HARVESTING INDEX OF RAKAM, SALACCA WALLICHIANA MAR.
The changes in acidity, astringency, and percent of total soluble solid (% TSS) were investigated to index for suitable harvesting period of rakam (Salacca wallichiana Mar.) fruits. During the period of fruit development from week 17 to 28 after bloom, acidity decreases from 7.5 to 0.5 mg/100 ml of juice. Similarly, astringency rapidly decreases from week 16 to 26. The changes in astringency can not be detected after week 26. From week 10 to 16, the fruit contains 17–21 % TSS compared to 12–14 % TSS from week 17 to week 30 after bloom, then the percentage of TSS decreases. Not only acidity and astringency, but also percentage of TSS are suggested to be important factors in indicating harvesting index of rakam fruits. The rakam fruits harvested within week 28 to week 30 after bollming give the most desirable quality of marketable acceptance.
