EFFECT OF SKIN COATING ON SHELF LIFE AND QUALITY OF 'NANG KLANGWAN' MANGOES
The effect of Semperfresh, a commercial skin coating, on shelf and selected quality attributes of 'Nang Klangwan' mango fruits was investigated. Weight loss, yellow color development, firmness and the chemical changes associated with ripening were monitored in waxed and non-waxed mango fruits during holding at ambient temperature (32°C and 74.0% RH). Mango fruits waxed with 2% and 3% Semperfresh caused off-odor within 6 days, while 1% Semperfresh-waxed mango fruits normally ripened and were acceptable, though slightly inferior. Shelf life of 1% Semperfresh- waxed mango fruits was 14 days, while non-waxed mango fruits had shelf of 10 days. Relative to non-waxed mango fruits, yellow color development, weight loss and TSS were less but greater TA and firmness in waxed mango fruits.
