VOLATILE SULFUR COMPOUNDS OF ESSENTIAL OIL OF PORTUGUESE GARLIC
Studies about the pharmacological applications of garlic extracts were performed at our laboratory.
Two lines of research were carried out to reach the degradation products of allicin, responsible for the antithrombocitic action of the garlic bulbs extracts.
This work respects only the essential oil and the volatile sulfur compounds.
Two varieties of garlic are cultivated in Portugal: the white and violet. This study is based in the essential oil from the violet variety.
The pungent odour of garlic is reported in the bibliography due mainly to the sulfur compounds.
