PENETROMETRIC PROPERTIES OF APPLE VARIETIES IN HUNGARY
The rheological properties which were tested were yield stress, rupture stress, the quotient of them and the work of deformation.
We considered the rheological properties as variants.
We used the method of analysis variance to check the relations of quality.
As a result of calculations we can use rupture stess for evaluating the difference in quality according to apple varieties.
The stress quotient was proved to be suitable to test the effect of storing time and the work of deformation was suitable to test the effect of picking time.
