The duration of quality maintaining of tomatoes harvested in different stages of maturity and of the mild pepper harvested at the stage of maturity for consumption was followed by the rate of colour evolution, of pulp fermentation, of losses of quantity, of quality damages and changes in the chemical composition.
Storage of fruits occurred in cool spaces and also in uncool spaces.
PE-films are used for protection of the stacks of boxes which contain mild peppers.
The results give explanations to the technology of early tomatoes and temporary storage of mild peppers.
