APPRECIATIONS ECONOMIQUES CONCERNANT LA CONSERVATION DES LEGUMES ET DES POMMES DES TERRE

The paper concerns the role of fresh vegetables and potatoes in daily food and the importance of their temporary preservation or of their preservation for a longer period of time, depending on destination, species and varieties.

The necessity of extension of the consumption period for the establishment of an equilibrium between demand and supply as well as the avoidance of great fluctuations of prices on the market are shown.

Therefore, the paper deals with a suitable marketing of the products preserved in accordance with the more modern and more economic technologies.

It is provided to reduce the losses in weight and the qualitative depreciations.

The synthetic indicators of the economic efficiency concerning the preservation of vegetables and potatoes are specified and analyzed.
