CORRELATIONS BETWEEN SOME WINE SENSORY DESCRIPTORS AND GRAPE HARVEST TIME

The influence of cultivar, year and harvesting time on sensory characteristics of wines have been studied. As regards the harvesting time, significant differences among the wines in the intensity of the descriptors: 'sugar', 'alcohol', 'acidity', 'tannins', 'aromatic fineness' and 'overall judgement' have been observed.
