WATER LOSS AND QUALITY LOSS DURING POST-HARVEST STORAGE OF ASPARAGUS AND BROCCOLI: A MAGNETIC RESONANCE IMAGING STUDY

After harvest there is a continuous loss of water from all parts of plant material. We wanted to know whether all of this water loss is equally important. We have used a combination of simple and sophisticated techniques to investigate the links between loss of water and quality loss.
