Jujube (Zizyphus jujuba Mill. cv.
Li) is a fruit of tropical and subtropical origin, with a seasonal character and a very short harvesting period, from the end of August until mid September.
Although there is little information available about this cultivar, we know from references to other species and previous experience that the postharvest period is also very short due to the deterioration caused by weight loss, which takes place very rapidly (Kader et al., 1982).
