INFLUENCE OF MATURITY STAGE ON PHYSICAL PROPERTIES IN APPLE
Non-destructive but objective tools are required to obtain information about the stage of fruit development, to predict the optimum harvest date (OHD) and to monitor ripening during shelf life.
Spectral transmittance recordings and elastic behavior were tested for their potential to describe the maturity of apples.
