CHANGES IN THE SOLUBLE CONTENTS OF GREEN VEGETABLES DURING COLD STORAGE

Chlorophylls, sugars, and phenols were titrated at regular time intervals after green vegetables (immature fruits, leaf crops) were placed in cold storage room. Chlorophylls decreased sharply within the first 24 hrs then remained at about the same level. Sugars, surprisingly, increased steadily with time. Same pattern for phenols. The possible significance of the sugar increase has been investigated and will be discussed.
