REHYDRATION KINETICS OF HOT-AIR DRIED CHESTNUTS

Dried chestnuts with hot air (65°C and 30% of relative humidity) till different moisture contents were submitted to rehydration by immersion into distilled water at different temperatures (25, 45, 70 and 100) and at several times, until 180 min. Experimental rehydration data were correlated with the two-parameters of the Peleg’s model. Peleg's constants depended from the temperature and the initial moisture content of rehydration.
