PERFORMANCE OF THE 'CACEREÑA' CULTIVAR IN THE INDUSTRIAL OLIVE OIL ELABORATION
Cáceres, the area of production, has been elaborated on industrial scale. The samples are differentiated by their state of maturation on sample of 5 lots of 5000 kg. This cultivar is the one protected by the D.O.P. Gata-Hurdes for the oil certification that fulfills the regulation established by this Organization. The production of the sampled lots has been realised in the Experimental Oil of Instituto Tecnológico Agroalimentario (INTAEX) of Badajoz, provided with equipment that allowed to control in mill, beater and centrifugal separators different variables that affect the process of oil extraction such as sieves used in the milling, temperatures of masses and water used as well as a high number of employees. With the obtained results we want to deepen the optimization of the process of milling and to verify the technological performance that this cultivar can present considering the reached output and the quality of the resulting different olive lots Manzanilla Cacereña collected in Sierra Norte of oils once we have analyzed its physico-chemical and organoleptic parameters.
