CHANGES IN ANTIOXIDANT ACTIVITY OF CITRUS TANKAN RIND AND EXTRACTED JUICE DURING STORAGE
Citrus tankan has become popular among commercial fruits in Okinawa. The changes in antioxidant activity during 30-days storage at normal temperature (25°C, 65%) or at cold temperature (5°C, 85%) of orange fruits were evaluated using the Folin Ciocalteu method and DPPH radical scavenging activity. Fruits stored over 20 days showed symptoms of deterioration. In general, the polyphenol content of juice and rind increased with increasing storage time. The radical scavenging activity of a water extract of the rind decreased in antioxidant activity during storage, while hexane and ethanol extracts were stable. No significant differences in the radical scavenging activity with water and hexane extracts of juice were found. The relationship between polyphenol concentration and antioxidant activity was also examined.
