OPTIMIZATION OF EXTRACTION CONDITIONS OF β-CAROTENE IN CHINESE JUJUBE FRUITS
In this research, the extraction of β-carotene from the fruits of Chinese jujube Dongzao at white maturing period was optimized with the assistance of ultrasound. The effect of extraction solvent, solid-liquid ratio, extraction time and times on the β-carotene extraction was developed. An orthogonal array design was used for process optimization. The results were as follows: maximum β-carotene was extracted in acetone/petroleum ether (50:50), extraction time 30 min, the liquid to solid ratio 8:1, and five times extraction. The extraction rate of β-carotene under this condition could reach the highest value of 15.78 μg/g.
