MICROBIOLOGICAL AND PHYSICOCHEMICAL QUALITY OF FOUR CULTIVARS OF DATES IN THE REGION OF BECHAR, SOUTH-WEST OF ALGERIA - OPTIMIZATION OF CONSERVATION BY ROSMARINUS OFFICINALIS L. ESSENTIAL OIL
The aim of this study is to value four cultivars of dates (Feggous, Cherka, Taquerboucht et Deglet Talmine) in the region of Bechar (south-west of Algeria) and also, to optimize the conservation of these species by Rosmarinus officinalis L. essential oil. The morphological and physico-chemical properties of the fruits studied shows that they are semi-soft dates, with important weights and dimensions. They contain a rate of humidity between 21.90 and 25.24%, a slightly acidic pH and acidity ranging from 0.19 to 0.23%. The four cultivars include a rate of total sugars which exceed 60%, a content of fat between 0.6 and 1.6%, a protein content ranging from 3.69 to 6.01%, the ash exceeds 1.18%. The microbiological analyses of dates showed the existence of total aerobic flora, a fungal flora dominated by Penicillium and Aspergillus, as well as the absence of pathogen strains. Besides, the influence of the addition of R. officinalis L. essential oil at different concentrations (0.04 to 0.28%) on the physico-chemical and microbiological quality of dates during storage was followed by an interval of 15 days in a period stretching from 15 October 2010 to 16 May 2011. The obtained results show that there is a decrease of humidity, and pH, a slight increase in acidity and a reduction of the microbial flora. On the other hand, the results of the sensory analyses show a good appreciation of dates coated with R. officinalis L. essential oil.
