COMPOSITION AND CONTENTS OF ANTHOCYANINS IN DIFFERENT POMEGRANATE CULTIVARS

Abstract
Three pomegranate cultivars with different colors, Taishanhong, Daqingpi, Moshiliu, were investigated using HPLC method to study anthocyanins (ACs) in fruit peel and juice.
In Taishanhong, Daqingpi, Moshiliu, five ACs were identified in peel, without pelargonidin 3,5-diglucoside (Pg3, 5dG) detected.
Delphinidin 3-glucoside (Dp3G) and cyanidin 3-glucoside (Cy3G) were the major ACs of the peel in the three cultivars.
Six ACs were detected in juice, delphinidin 3-glucoside (Dp3G), delphinidin 3,5-diglucoside (Dp3, 5dG), and cyanidin 3-glucoside (Cy3G) were three major ACs of the juice.
There were significant differences in the ACs concentration of the same part among different cultivars.
In peel, total ACs concentration in Moshiliu pomegranate was the highest which was up to
344.0 mg·100 g-1. In the fruit juice, total ACs concentration in Taishanhong pomegranate was the highest (364.0 mg·100 g-1), which was significantly higher than other cultivars.
In Taishanhong, Daqingpi, Moshiliu, total ACs content in the peel was higher than that found in fruit juice.
The content of glucoside was higher than diglucoside.
The study showed that there were significant differences in the anthocyanins content among cultivars and the parts in pomegranate.
Differences in ACs content varied greatly among pomegranate cultivars, and ACs content was positively correlated with the color of peel and juice.
Total ACs content in the peel was higher than juice and glucoside was higher than diglucoside.
