Analysis of volatile aroma compounds from mango leaves

C.B. Wei, Z.L. Ma, J. Qiao
The volatile aroma compounds in mango leaves were analyzed qualitatively and quantitatively using the method of HS-SPME and GC-MS. 31 compounds were found in leaves of 'Irwin' mango, largely consisted of terpenes and esters, the total concentration was 6174.5 µg kg‑1. Of all aroma compounds identified, the concentration of (Z)-3-hexen-1-ol acetate was the highest at a level of 1857.0 µg kg‑1, followed by (Z)-β-ocimene with a concentration of 927.9 µg kg‑1, germacrene D with a concentration of 915.9 µg kg‑1 and β-elemen with a concentration of 827.5 µg kg‑1.
