Abstract
Polysaccharides are biopolymers composed of a large number of monosaccharides linked by glycosidic bonds.
Jujube polysaccharide has many biological activities, such as anti-oxidation, anti-aging and promoting immunity.
It can be used in food, medicine, biomedicine and other fields.
The extraction methods of jujube polysaccharide were reviewed, including traditional hot water extraction, subcritical water extraction, microwave-assisted extraction, ultrasonic assisted extraction, enzyme assisted extraction and supercritical CO2 extraction.
This review will provide a reference for the study of jujube polysaccharide.
