Trends in potato consumption under the influence of socio-economic factors

Abstract

Potatoes are one of the staple foods in the diet, traditionally consumed by the population, being considered over time the Romanians second bread. For these reasons, this study aims to analyze the socio-economic factors determining the level of potato consumption, such as residence environment, social categories, population income, prices, etc.
In this regard, descriptive statistics of the established variables and the link between them were performed using the Pearson coefficient.
At the same time, an econometric model based on linear regression of variables was developed to identify the extent to which potato consumption is influenced by established variables.
Rising living standards as well as changes in eating habits have had an impact on the decline in consumption of this popular food.
