Abstract
There are seven canning factories in Sudan.
These factories could produce enough quantities of fruit juice, jams, marmalade and canned vegetables, if operated at full capacities.
However, of all the canned products tomato paste is in real shortage as a result of inadequate raw tomato supply.

The paper covers the research work that have been carried out in the field of canning of fruits and vegetables in the Food Research Centre.
