Abstract
Banana beer or tonto is a major alcoholic beverage traditionally produced in Uganda. However, very little is documented about this commodity.
Investigations on traditional production of the beer were carried out.
Chemical and sensory characteristics during 8 days of storage were determined.
A low alcohol content (2% v/v) tonto was produced.
Overall acceptability tests of the beer showed the beer can remain drinkable for about 4 to 5 days.
Studies for the improvement of the product’s shelf-life were suggested.
