POSTHARVEST PROTEOMICS

In this review, we outline the state of the art of proteomic techniques and their application within the postharvest industry. The relevance of high throughput proteomic approaches is to increase insight and understanding of how postharvest processing is affected by the product’s physiology and, through this, to enable optimization of the overall horticultural chain. Application of proteomics research in postharvest includes but is not limited to the understanding of physiological disorders due to biotic and abiotic stresses, protein changes induced in fresh cut produce, application of abiotic stresses to induce desired changes in texture and aroma.
